Mini Bib's Pancakes with Chocolate Sauce

FOR THE PANCAKES:
1 cup flour
1 cup milk
1 egg
2 teaspoons sugar
1 teaspoon baking powder
1 tablespoon oil
3 packs of Bib's Milk Chocolate
FOR THE CHOCOLATE SAUCE:
1 bar of 1891 Intense 70% cocoa chocolate
1/2 carton heavy cream
FOR ASSEMBLY:
1 pack of Bib's Milk Chocolate
Preparation
PANCAKES:
Beat the egg in a medium bowl until it doubles in volume and becomes foamy.
Add the sugar and stir until combined. Add the oil and milk, mix well, then add the sifted flour and baking powder.
Once the batter is smooth, refrigerate for at least thirty minutes.
After resting, add the Bib's to the batter (they can be whole or broken, keeping in mind they only stay crunchy if added whole).
Heat a skillet over medium heat and add one spoonful of batter at a time.
When bubbles start to form on top, flip with a spatula and cook for another thirty seconds. Repeat until the batter is used up.
CHOCOLATE SAUCE:
Break or chop the Neugebauer chocolate bar into small pieces.
In a bowl, place the Neugebauer chocolate and the heavy cream of your choice.
Microwave it. Every 30 seconds, open the microwave and stir everything.
Stirring while the chocolate is warm helps the melting process along.
NOTE: If you notice there are still a few granules or small pieces of chocolate left, microwave for another 20 sec, or until melted. Remember that at each pause, the chocolate needs to be stirred.
Right after these steps, it is ready to be used in your recipe.
ASSEMBLY:
Stack five pancakes on each plate. Pour a generous amount over each serving and finish with more Bib's.
